Aji - The Concept.
When Christopher Colombus stumbled upon the Caribbean (albeit on his search for the spicelands of the Orient) the natives there called the chilli "aji" - pronounced a'hee. Aji is the first known name for chilli. Over the centuries, world trade (and the rise and fall of nations), has revolved around four major commodities; coffee, tea, cacao, and - most romantic of all - spices. These are the cornerstones of Aji's identity.
