An Ethiopian Spice Mix, Berbere is comparable to an Indian Garam Masala. Pungent, sweet and earthy in fragrance; staple ingredients include ginger, cloves and chillies. Use as a rub to coat meats before barbecuing, roasting, grilling. Commonly mixed with fried onions and olive oil to make a paste which is then used to flavour stews and casseroles. Pronounced "ber-beray".
